Grilled Shrimp & Mango Salad
Ingredients:
- 1lb shrimp, peeled
- jalepeno
- olive oil
The Veg in the Salad:
- 1 mango
- Grilled corn
- butter lettuce
- green onions
- avocado
- sugar peas in pod
- cilantro
- juice of 2 limes (or more)
- siracha to taste (or chile paste, or chili flakes)
- 1tbsp brown sugar
- 1tbsp fish sauce
- 2tbsp sesame oil
- olive oil
- Light your charcoal.
- Mince the jalepeno, cover it with olive oil.
- Put your corn on the grill (This takes about 10m per side, maybe longer. I just put it on the grill and let the husk get mildly blackened.)
- Skewer the shrimp. Drizzle them w olive oil blend.
- Grill em up! (maybe 3m per side)
- Blend the dressing, adjust seasonings to taste.
- Cut the kernels off the corn.
- Put the veg in a bowl, top with shrimp, top with dressing.
- Enjoy!
